
One of the most popular street foods of Mumbai is Sev Batata Dahi Puri which simply is puffed puris stuffed with sprouts, potatoes, yogurt and onions with a topping of chaat masala, a drizzle of green and tamarind chutneys and a generous amount of sev.
The final recipe is just assembling of these ingredients and no cooking required. And hence it makes for a good preparation for guests as it can be prepped earlier.
I made this recipe by using a few leftovers from my previous dish, Ragada Pattice. The potato mixture, onions and the chutneys were the leftovers from the previous day and it saved me a lot of time in this preparation.
The other ingredients required are boiled moth sprouts, blended sweet yogurt, sev and the puffed puris

Prep time: 20 mins
Ingredients
1.5 cups boiled sprouts (Boil with a pinch of turmeric and salt)
3/4 cup tamarind chutney
3/4 cup green chutney
1 cup chopped onions
30 – 35 puffed puris
1 cup boiled potatoes
2 cups blended yogurt (Add sugar to taste)
Chaat masala ( a Pinch goes on 7 puris) or to taste

Method
Make small holes in the puris with your thumb
Layer the inside of the puris in this fashion. First goes the potatoes mixture, then boiled moth sprouts. THe puri will be more than half filled.
Next is pouring of yogurt, which will fill up the puris to the brim, chutneys, onions and lastly sev and chaat masala. The finished dish looks like in the below picture.
Pick each puri with the help of the spoon to avoid any breakage although it tastes better when eaten with hand
It is an immensely simple recipe to make with chutneys that can be made and refrigerated for a few days.
