
Wondering what Topea means! Well it simply means tofu and peach put together in a salad- Topea! It has a tropical summer feel to it since peaches are added to this vegan salad recipe. Since the Lock down period has started it has been an all out cooking at home and making something healthy along with managing the flavors well so your kids don’t make a face has been a priority.
But again came a testing time when food has to be conserved and cooked with minimal ingredients. This salad has the flavor in place and uses only 4 main ingredients which will serve you as a complete meal. The good thing is, the salad ingredients are easily available to major people and it can be cooked within half an hour.

Mixed salad leaves
250 g Tofu
3 vertically sliced pieces of zucchini
1.5 peach fruit
For the dressing
1 tbsp olive oil
1/4 tbsp rice vinegar
1.5 tsp mixed herbs
1/2 tsp dry basil
1/2 tsp brown sugar
Salt and pepper to taste
Method
Mix all the salad dressing ingredients in a small glass bottle and shake it well. Let it sit until you assemble the salad.
Slice the tofu into thin small pieces.

Wash and tear the salad leaves with your hand in irregular shape, do not use knife.
Arrange the leaves in a serving salad bowl.
Now grill the sliced tofu with no oil. When you flip it on the other side drizzle some oil dressing and lay each piece on the arranged salad leaves. Leave half the dressing for drizzling over the entire salad.
Now grill the sliced zucchini and arrange it in the bowl.
Add sliced pieces of peach in the bowl.
Lastly drizzle the remaining dressing over the whole salad.
You have a salad packed with nutrition and flavor.
