Whenever I am in a mood to have comfort food these ingredients come to my mind – lentils, green leafy veggies, rice or flour for humble roti. Somehow these are my pantry staples and there is not much of planning required and hence the comfort food tag.
Red lentils and spinach go very well together and cook in a jiffy. They require very few masala’s to enhance its flavors and the recipe is very uncomplicated. It would be great for people who are always in a hurry.
Red lentils curry requires a few staple masala ingredients like a piece of cinnamon, 2-3 cloves and pepper for that intense flavour and aroma that takes this humble recipe to another level. Along with the spices spinach adds to the health quotient of the recipe.

1 medium bunch spinach
1 cup Red lentils
2 cloves garlic
1/2 medium onion
1/2 inch ginger
A small cinnamon stick
2 tsp red chilli powder
1/2 tsp turmeric
1/2 tsp Coriander powder
2 tbsp oil
Salt to taste
Soak the red lentils for and hour. Till it soaks prepare the spinach by washing and cleaning it of any thick stems
Blanche the tomatoes and grind it to make a paste. If you are in a hurry then you can just chop it and keep it for frying directly in oil.
Grind the garlic, onion and ginger to a smooth paste.
When the lentils are soaked enough take them out of the water and throw the water.
Put oil in a kadhai or pan and stir fry onion garlic and ginger paste for around a minute. Add cinnamon, cloves and pepper and let it cook.
Next add red chilli powder and tomato paste. First goes the red chilli powder and immediately goes the tomato paste in the pan. Stir the mixture well and let it cook for a minute or two.
Add turmeric powder, coriander powder and the soaked red lentil along with salt. Let it cook till it is little less than completely cooked.
Add chopped spinach at this point and let the lentils and spinach cook till completely done. See that the lentils do not over cook.
Check the seasoning and add any seasoning if required.
Serve it with roti or rice.
